Course Outline:

This Nationally Accredited training covers the skills and knowledge required for participants who wish to conduct Regulatory Food Safety Audits.

These units of competency describe the skills and knowledge required to assess food safety programs for compliance; the skills required in planning and conducting an audit; as well as evaluating the HACCP plan for hazards and control measures required to ensure the complete food safety management system is appropriate for any food business.

This course has a strong focus on auditing the specialised high-risk Cook Chill Processes

This training supports the implementation of National Food Safety Audit Policy.

There are no prerequisite training units required to attend this training session however it is expected that trainees possess at least the following basic skills:
It is expected that participants have a strong understanding of HACCP Principles at least two years of experience in the food industry managing food safety.

On the successful completion of this training and assessment; trainees will be issued a Statement of Attainment with the following units of competency:
FBPAUD4001 – Assess compliance with food safety programs
FBPAUD4002 – Communicate and negotiate to conduct food safety audits
FBPAUD4003 – Conduct food safety audits
FBPAUD4004 – Identify, evaluate and control food safety hazards

FBPAUD5002 – Audit a cook chill process

Auditors wishing to conduct regulatory food safety audits may require additional high risk specialised units of competency including any of the following:
FBPAUD5001 – Audit bivalve mollusc growing and harvesting processing
FBPAUD5002 – Audit a cook chill process
FBPAUD5003 – Audit a heat treatment process
FBPAUD5004 – Audit manufacturing of ready-to-eat meat products
