Course Description

This comprehensive 5 day course is designed to provide participants with the skills and knowledge to be able to plan and conduct a food safety audit.

This comprehensive training course will include an industry focus on, and include the additional high-risk unit for auditing a Cook Chill Process

These units are the minimum requirements for food safety auditing. Additional high risk scope units may be required for those auditors wishing to conduct high risk regulatory audits.

Application of Unit

This course covers a number of units of competency specific to Food Safety Auditing.
This course applies to regulatory, commercial and internal food safety system auditors.


Each participant may be assessed by a range of methods including:

  • Case Studies and Participation in workshop discussion
  • Observation in the workplace / Role-plays / Interviews
  • Demonstrated Record-keeping Skills & Written Assessments

Pre Requisite Units

There are no prerequisite competency units required to attend this training course however it is expected that all trainees attending possess a strong understanding of HACCP Principles and is appropriate so that participants have a detailed understanding of the steps and techniques used to review and assess a HACCP-based food safety program
